The Story

This one is all about the syrup. We cook brown sugar with water until it gets thick and dark, almost like molasses but sweeter. The syrup gets drizzled down the inside of the cup so it sticks to the glass in streaks. Then the milk goes in cold, and the pearls sink to the bottom.

The first sip is milk. Cold, clean, plain. Then the syrup hits. It is warm and caramelised, with that toasty, almost burnt-toffee edge that good brown sugar gets when you cook it long enough. The pearls have been soaking in the same syrup, so they carry that sweetness all the way through.

This is the drink that converts people who think they do not like boba. The tiger stripes on the glass are not just for show. They tell you exactly how much syrup is in your cup.
