Blue Ocean

The Story

Butterfly pea flowers brew into a deep blue tea that looks like the bottom of a swimming pool. The colour is natural. No dye, no syrup, nothing artificial. Just dried flowers and hot water.

We steep the tea until it turns that dark, almost purple blue, then layer it over coconut milk so the colours separate in the cup. The tea is light, a little earthy, a little floral. The coconut milk gives it body without making it heavy. Add the pearls and you get something that looks like a sunset in reverse.

It photographs well. But more importantly, it tastes clean. The kind of drink you reach for when you want something refreshing but don’t want plain iced tea.
