Taro is a root vegetable. Most boba shops use taro powder because it’s faster. The powder gives you a uniform purple and a flat, sweet taste that doesn’t change from sip to sip. We don’t use it.
We cook real taro root and blend it into the milk. The colour comes out different every time because that’s what happens with real produce. Some batches are more purple. Some lean grey. The flavour is nutty and earthy, with a starchy thickness that coats your tongue and sits in the straw between sips.
This is the one people come back for after trying the Classic first. It’s heavier, more textured, and the taro flavour is stronger. If you’ve only ever had taro from a powder mix, this will taste different. That’s the point.
