Bubble waffles started as street food in Hong Kong. They are made from an egg-based batter pressed in a special mould that creates rows of small, round bubbles. Each bubble is crispy on the outside and hollow and soft on the inside.
We make ours to order. The batter goes onto the iron hot, and you can hear it sizzle from the counter. It cooks for a few minutes until the outside is golden and crunchy, then we fold it into a cone shape while it is still warm. The bubbles snap off easily, which makes it fun to eat piece by piece.
Pick your drizzle, pick your toppings, and pair it with whatever you are drinking. The waffle is warm. The boba is cold. That combination is the whole point of ordering both.
