Berry Heart Waffle

The Story

We press this waffle in a heart-shaped iron, which sounds like a gimmick until you see it come out. The shape holds the berries in the centre so they do not slide off, and the cream pools in the grooves of the heart pattern.

The berries are fresh. Strawberries, blueberries, and whatever else is in season. They go on top of the cream while the waffle is still warm, so the bottom berries soften slightly while the top ones stay firm. The drizzle goes on last.

People order this one to share. Or they order it and say they are going to share it and then eat the whole thing themselves. It photographs well, but it tastes even better than it looks. The warm waffle, cold cream, and fresh fruit together is hard to beat.
